Recipe of the Week #121- Fudgy Brownies



Fudgy Brownies
1 cup semi-sweet chocolate chips
10 Tbsp butter
2 eggs
1 1/2 cups sugar
1 Tbsp vanilla
1/4 cup unsweetened cocoa powder
3/4 cup flour

Preheat oven to 325 degrees. Grease 8"x8" or 9"x9" pan.
Measure butter and chocolate chips in microwave safe bowl. Microwave for 1 min, stirring every 20 seconds, until chips are melted. Mixture should be smooth when completely melted. Set aside to cool.
In a small bowl, mix flour and cocoa. Set aside.
Whisk eggs, vanilla, and sugar in a separate bowl. Add chocolate mixture to this and mix. Next, add flour mixture and mix. Batter will be thick and slightly gritty.
Place in pan. Bake for 50-60 minutes until toothpick inserted in the center comes out clean. Allow to cool for 30 minutes before serving.

Now, I'm usually a box brownie kind of girl, but these were very good. I doubled the batch and made them in a 13"x 9" pan, so they ended up very thick. They were a big hit at our house.
